German Pancake with Pan-Glazed Apple Cinnamon Slices

 

The Pancake

  1. 3 eggs
  2. 1/2 cup flour
  3. 1/2 cup milk
  4. 2 tablespoons butter, melted
  5. 2 tablespoons butter, softened

Heat heavy skillet in 450 degree oven until very hot. With wire wisk, beat eggs until blended. Sift flour, measure and sift again. Add flour to beaten eggs a little at a time and beat after each addition just until mixture is smooth. Add milk in two additions and beat lightly after each. Lightly beat in melted butter. Use the remaining two tablespoons of butter to grease bottom and sides of skillet. Pour batter into skillet. Bake at 450-degrees for 20 minutes. Loosen pancake from skillet and slide onto serving platter. Serve with melted butter and a sprinkle of powdered sugar or pan-glazed apple cinnamon slices.

 

Pan-Glazed Apple Cinnamon Slices

  1. 2 tablespoons butter
  2. 2 apples, peeled, cored and sliced
  3. 2 tablespoons sugar
  4. 1/2 teaspoon ground cinnamon

Melt butter in frying pan. Add apples sprinkled with the cinnamon-sugar mixture. Cook over low heat. Stir occasionally until apples are glazed and tender. Spoon into center of baked pancake.

 

I doubled this recipe for my family of 4 and we had about 1 serving left.
